Fusilli all'avellinese (Avellino fusilli)

Ingredients:
800 g. Bran;
200 g. g rated ewe's milk cheese;
600 g. mozzarelline (tiny mozzarella cheese);
500 g. minced meat;
2 eggs;
1 spoon minced basil;
ragù sauce (meat sauce); salt









Prepare the ragù. Work bran and water into dough. The mixture has to be tough. Shape it as the fusilli pasta and boil them in water with some salt. Drip them and flavour them with a part of the ragù, with some ewe's milk cheese ans some minced basil. Put them in a pan aand in the middle put the meat-balls you have already fried; you make them mixing the minced meat with eggs, salt, cheese and the mozzarelline. Cover them with some other sauce ans ewe's milk cheese. Put in the warm oven for 20 minutes.
