Potato croquettes

Ingredients
7 potatoes, 3 eggs, 70 gr freshly grated Parmesan cheese, 250 gr sliced mozzarella cheese, 1 tbsp chopped parsley, bread-crumb, salt, pepper.

Preparation
Put the potatoes into a large pan of salted water. Bring to the boil and simmer until the're just tender. Drain and cool, then peel away the skin. Put the potatoes into a ricer and sqeeze them. Put the mashed potatoes in a large bowl and make a wide well in the centre.
Tip the eggs yolks into the well and season with the salt, the pepper, the grated Parmesan and the chopped parsley; mix all the ingredients to form a dough. Put a small amount of dough in the palm of a hand and put a slice of mozzarella in the center.
Roll it into a small sausage then turn it over the whipped egg whites and coat it with bread-crumbs and cook. Put all the croquettes in the fridge for about half an hour. Cook them in fat.
